I'm looking to replace a KMC 9J-2, looks to be 1/2 x 3/16 116 links

Is this easy to shorten?

I got a Wipperman 108 chain (112 links) a while ago that is too short for my setup. I think I need 114 or maybe more links (hub gear, 52T chainring up front, rear sprocket is 25T).

Is it possible/easy to shorten this chain?

Also what is the difference between the 1E8 chain and the 108?

Yes, simple and easy to shorten providing you have a chain compatible with 1/8 pitch chains.

The 1E8 is designed for use with E bikes that provide extra torque.
