Can I use this with Shimano FH-M6000 Deore Rear Hub for Centre-Lock Disc

SJS Customer Service:

definitely not- roller brakes are designed for use only with nexus hubs which use a very different splined fitting for roller brakes. You can only fit Shimano Centerlock disk brake rotors to the FH-m6000 hub.

How do I choose which spacer to use?

There should be a washer fitted to the hub currently, measure and match is the advice from Shimano.
