Can I use this with a Hope Pro 3 Mono hub to accomdate 11speed?

Hi there,
If your hub is a Pro2 Evo you cannot use it with 11spd road cassettes, but you can with 11spd MTB.
If your hub is a Pro2 Evo 40t, you can fit - SJS Cycles part number : 43797 to be used with 11spd road or MTB with a spacer.
